I feel like I get super emotional around New Years. It’s incredible to think of everything we accomplish in just one year! Looking back on 2016, it definitely was one of the harder years for me. Not only was I healing from intensive liver surgery the beginning of 2016, I was living abroad in Santo Domingo, DR. Being sick and out of your comfort zone, away from family is unpleasant and scary. I eventually was diagnosed with Celiac in March of 2016 and began my journey of cooking food that was not only delicious, but healthy on my body.
In the fall of 2016, I started my Master’s program in Media Studies at The New School and as hard as it was, I made it to the finish line with the highest grades I’ve ever had J And most importantly, my little family made another international move (twice in 2 years) to NYC! I am very grateful to be back home in the USA, but I will cherish and appreciate my beautiful experience in the Dominican Republic. If anyone has the chance, make a trip down! The beaches, food, culture and people are one of a kind. If there's anything Dominican's have taught me, its that "la vida hay que cogerla suave porque es bolero" and to live everyday grateful and happy. New Year’s always brings new resolutions and this year my resolution (besides cooking up a storm and sharing with you all) is to be kind and to be happy in the moment. My mother in law sent me this beautiful quote this morning and it really has been on my mind all day and spoke to me about how I want to live in 2017. "People are often unreasonable, irrational, and self-centered. Forgive them anyway. If you are kind, people may accuse you of selfish, ulterior motives. Be kind anyway. If you are successful, you will win some unfaithful friends and some genuine enemies. Succeed anyway. If you are honest and sincere people may deceive you. Be honest and sincere anyway. What you spend years creating, others could destroy overnight. Create anyway. If you find serenity and happiness, some may be jealous. Be happy anyway. The good you do today, will often be forgotten. Do good anyway. Give the best you have, and it will never be enough. Give your best anyway. In the final analysis, it is between you and God.
