       Gluten Free Bread

The hardest part about being GF is not being able to enjoy REAL bread. I was someone who used to have a slight obsession with bagels and every type of bread. Well - It has taken me almost a year to accomplish the impossible, but I think I have found THE recipe. 

I used to look at baking bread as something I'd leave up to my grandma. It always seemed so complicated. But this recipe is seriously the easiest. 

  • 3 eggs
  • 1 1/2 tablespoons olive oil
  • 1 teaspoon Apple cider vinegar
  • 1 3/4 cups of water
  • 2 tablespoons chickpea flour
  • 3/4 cup rice flour
  • 1 cup tapioca starch
  • 3/4 cup potato starch
  • 2 teaspoon salt
  • 1 tablespoon sugar
  • 3 teaspoons xanthan gum
  • 1 tablespoon dried yeast

Beat the eggs, olive oil, water and vinegar in a mixer. Then combine the flours, starches, salt, sugar and xanthan gum in a seperate bowl, then add the yeast. Pour these ingredients into the liquid mixture and beat for  2 minutes on a low speed. Pour the dough into a greased loaf tin (I usually use 2) smooth the surface and let it stand for 30 minutes. In the meantime, turn on the oven to 350 degrees and bake for 30-35 minutes, or until the top is a little browned. 

Serve with whipped butter and honey or with any soup. Great for breakfast!
