Last year I was supre into zooodles (zucchini noodles), but I made them so much my husband can't look at them anymore. So here we are onto the NEXT trend - Sweet Potato Noodles or SPoodles? This weeknight dinner was easy and delicious and FAST! Asian food can be complicate for those who are GF, so I'm always happy when I can make a dish that fulfills my Asian cravings. And also, who doesn't love a healthier version of take out?
Ingredients: Noodles:
Thai peanut sauce:
First make the thai peanut sauce and set to the side. If you need to, spiral the sweet potatoes into a large bowl. I use this spiralizer. Heat up a large skillet and add a little bit of oil and the chicken. Season with salt and pepper. Cook until the chicken is done. 5 minutes. Once the chicken is done, set aside in a bowl or plate. Keep the skillet heat and put on a medium high. Add the sweet potato and broccoli and season with salt and pepper. Let it cook for about 3 minutes and then add the water. Once the noodles look soft (5 minutes of sauteeing) throw in the chicken and toss with the sauce and you're done! Top with peanuts and avocado. Or whatever you like!
