The Hungry Gringa was born in October 2015 when I first moved down to the Dominican Republic. As a foodie, I struggled to find healthy, fresh and delicious places to eat, so I originally started my instagram @thehungrygringa to be a food critic in the DR. (That didn't work so well), so I ended up diving into my not so secret hobby of cooking. My biggest pet peeve is going out to dinner, spending lots of money and having a pretty underwhelming meal. It happens way too often, so I decided to start cooking majority of my meals at home, and thats how the Hungry Gringa came to be.
Dealing with the ups and downs of having type 1 diabetes, food has always been a complicated subject (As most who struggle with the disease know). On top of that, I was diagnosed with Celiac this year. My life completely changed, and for the better! Although my love of bagels and bread are no longer a thing, I can finally say I feel 100% better. I have found eating gluten free doesn't have to taste like cardboard and you actually can be a foodie without having to eat the G word. Join me as I take this new life adventure in New York City being a mom, wife, friend and most importantly, A GF FOODIE! #GringaApproved
