I absolutely LOVE Greek food. Top 3 favorite cuisines for me. It's the lemon, feta, cucumber and dill flavor that I find refreshing and delicious. This rice bowl is more or less a build your own bowl. It's made with brown rice, lamb and your choice of Greek inspired toppings.
Ingredients:
First make the rice. I use Lundberg brand of brown rice and it takes around 40 mins to make. Prep and cut the vegetables and throw in a bowl. Squeeze the lemon and add a little put of olive oil. Mix with salt and pepper and then add the feta. Heat a large skillet with a litte pit of oil. Once hot, add the lamb. Cook the lamb until it's all the way cooked and then add the oregano and dill and season with salt and pepper. Once everything is done, put rice in a bowl and top with the lamb and vegetables. Add hummus or tzatziki sauce in bowl.

Last year I was supre into zooodles (zucchini noodles), but I made them so much my husband can't look at them anymore. So here we are onto the NEXT trend - Sweet Potato Noodles or SPoodles? This weeknight dinner was easy and delicious and FAST! Asian food can be complicate for those who are GF, so I'm always happy when I can make a dish that fulfills my Asian cravings. And also, who doesn't love a healthier version of take out?

Thai peanut sauce:
First make the thai peanut sauce and set to the side. If you need to, spiral the sweet potatoes into a large bowl. I use this spiralizer. Heat up a large skillet and add a little bit of oil and the chicken. Season with salt and pepper. Cook until the chicken is done. 5 minutes. Once the chicken is done, set aside in a bowl or plate. Keep the skillet heat and put on a medium high. Add the sweet potato and broccoli and season with salt and pepper. Let it cook for about 3 minutes and then add the water. Once the noodles look soft (5 minutes of sauteeing) throw in the chicken and toss with the sauce and you're done! Top with peanuts and avocado. Or whatever you like! |
